Description
Waldorf Salad is a fruit and nut salad that is a little pit sweet and a little bit savory. Serve as
an appetizer, a light lunch, on your brunch table or as a side dish with pork or chicken.
Ingredients
⅓ cup mayonnaise
⅓ cup plain greek yogurt
1 tablespoon lemon juice
½ teaspoon Kosher salt
½ teaspoon black pepper
2 teaspoons sugar
4 small or 2 large apples (Your favorite type) un-peeled and cut into bite size pieces
1½ cup seedless grapes (Your favorite type) cut in half
2-3 celery stalks sliced or diced
½ cup walnuts (Roasting apptional) see additional comments/instructions.
Instructions
In a large bowl combine mayo, yogurt, lemon juice, salt and pepper, sugar and mix well. Add
the chopped apples, sliced grapes, sliced/diced celery and walnuts (If not roastin). Mix to
coat all the ingredients into the dressing. You can serve immediately or you can slightly chill
in the refrigerator (1 ½ hours).

Additional Comments
If roasting the walnuts. Place a heavy bottoms pan over medium and bring to temperature.
Add walnuts to a dry pan and stir until you can smell the walnuts, they will begin to look dry
and may start to darken slightly. Remove walnuts to a plate and willow to cool. To keep the
walnuts nice and crisp add to salad right before serving.
