Description
My tuna salad recipe is simple and delicious, the addition of hard boiled eggs adds that little
something extra. Perfect for tuna sandwiches, lettuce wraps, a topping for crackers or top
salad greens with a scoop.
Ingredients
12 oz can of your favorite style tuna (Solid white/Solid Light or Chunk Light) drained. (You
could substitute with 12 oz of salmon or chicken)
⅓ cup fine diced red onion (about half a medium sized onion)
⅓ cup fine diced celery (about 2-3 stalks)
¼ cup fine diced sweet or dill gherkin pickles (about 2-3 pickles)
3 hard boil eggs
½ cup mayo
¼ teaspoon Pepper & Lemon seasoning (optional)
Salt & pepper to taste (for these measurements I use ½ teaspoon Kosher salt and ¼
teaspoon black pepper)
Instructions
Drain tuna and set aside. In a large bowl add the hard boiled eggs and mash until deserted
consistency. Add tuna to the bowl and flake tuna to desired consistency. Add
onions/celery/pickles/salt & pepper/pepper & lemon seasoning and mix to distribute evenly.
Add mayo and mix to combine well.
Serves
6 - 8
Additional Comments
Serve over salad greens, make lettuce wraps or as my favorite between 2 slices of a hearty
whgite bread. Substitute the tuna for canned salmon for a great salmon salad or roasted
chicken for a great chicken salad.
