Description

I can across this delicious looking British Trifle recipe on British Cook (https://youtu.be/v5FdqmsZxOs), I Americanized the recipe slightly and it came out delicious.

Ingredients

Lady Finger Biscuits (12 for this recipe but the amount needed will depend on the size of the bowl you are using). 4.6 ounce box of Cook & serve vanilla pudding or 2 cups of scratch made custard or Bird’s custard powder. 1 teaspoon Strawberry Jam per Lady Finger used. 1 cup of Sweet Sherry (See additional comments) 2 cups fresh raspberries ½ cup sliced and toasted almonds 1½ cups heavy cream (Or use 3 cups give or take of Cool Whip) 2 tablespoons confectioners sugar

Instructions

The proportions for this recipe are for a 9 cup 10 inch round bowl. Prepare the cook & serve pudding according to the directions on the box (In the video I suggested reducing the milk from 3 cups to 2 ¾ cups, but that is not necessary so stay with the 3 cups milk. Once the pudding is thickened, place aside and allow to cool slightly while you continue with the recipe. Using a serrated knife, slice the biscuits in half lengthwise, and make a sandwich using the desired amount of jam and repeat until the bottom of your bowl is covered. Slowly pour the Sweet Sherry over the filled biscuits and allow the Sherry to be absorbed into the biscuits for 5 minutes. Top the biscuits with about 1-1 ½ cups of the raspberries and gently pour the warm pudding over the raspberries and biscuits, cover with plastic wrap and refrigerate till pudding is firm. When pudding is firm, whip 1 ½ cups heavy cream plus 2 tablespoon confectioner sugar to a very thick spreadable consistency. Spread whipped cream over the top of the pudding, decorate with the sliced almonds and remaining raspberries and serve.

Serves

8 - 10

Additional Comments

If not using the Sweet Sherry you can omit it all together or you can replace it with an equal amount of white grape juice or something similar. Bird’s custard powder can be ordered on- line or may be found in the International Isle of a Supermarket. You can use Cool Whip or any non-dairy whipped topping in place of the whipped cream.
