Vine ripened tomatoes in olive oil and vinegar.

Ingredients

2-4 vine ripened Tomatoes 2-3 tablespoons good Extra Virgin Olive Oil 2-3 tablespoons Red Wine Vinegar (Or your favorite vinegar) Several good size pinches of White Sugar Salt & Pepper to taste

Instructions

Slice tomatoes into quarters, evenly coat with olive oil, vinegar, sugar and salt & pepper. Cover with plastic wrap and let marinate on the counter for 30 minutes or until ready to serve.

2-4

Additional Instructions

If desired serve with a crusty Italian or French bread.
