Bell Peppers stuffed with a flavorful ground beef, rice, onions and parmigiana cheese in tomatoes sauce toped with mozzarella cheese. What more could you want!
Ingredients
4 Large Bell Peppers (tops and seeds removed)1½ pound Lean Ground Beef½ cup Diced Onion¼ cup Parmigiano Reggiano1 cup Cooked Long Grain Rice2 teaspoons Italian Seasoning½ teaspoon Granulated Garlic½ teaspoon Salt¼ teaspoon Black Pepper3 cups Tomatoes Sauce½ cup Shredded Mozzarella Cheese
Instructions
Preheat oven to 400 FCut tops off peppers and remove seeds and membranes, set aside.In a large skillet over medium-high add ground beef, onion and brown. Drain fat if desired add cooked rice, Italian seasoning, granulated garlic, salt/pepper, Parmigiano Reggiano and mix to blend well.In a 9-inch square baking dish add 1 ½ cups of the tomato sauce, place peppers upright in dish, Fill peppers with the filling mix. Pour the remaining 1½ cup of tomato sauce over stuffed peppers. Cover tightly with foil and bake for 40 minutes or until peppers are tender. Remove foil and sprinkle mozzarella over tops of peppers and bake uncovered till browned.

Additional Instructions
To make this recipe a little lighter you could substitute the ground beef with ground chicken/turkey. If you want to make this recipe meat free use 2 cups of cooked rice instead of ground meat.
