Description
Similar in flavor to a ginger snap, spice cookies are made with molasses, cinnamon, ginger,
and nutmeg, resulting in a rich and chewy cookie.
Ingredients
12 tablespoons unsalted butter (room Temp)
1 large egg (room temp)
1 cup sugar
¼ cup mosassas
2 cups AP flour
1 teaspoon ground cinnamon
2 teaspoon ground ginger
½ teaspoon freshly grated nutmeg
½ teaspoon Kosher salt
1½ teaspoons baking soda
Instructions
Preheat the oven to 350 F.
Whisk together flour, baking soda, ginger, cinnamon, nutmeg, cloves and salt. Set aside.
Cream together butter and sugar. Add egg and molasses and mix until combined.
With speed on low, gradually add dry ingredients and mix until just combined.
Form dough into small balls, about 1 teasspoon per ball.
Bake at 350 F for 12 minutes. Cool cookies for 5 minutes on cookiesheets before transferring
to a cooling rack.
(The 12 minute baking time results in a slightly chewy cookie. For a crispier cookie, bake 2
minutes longer)
