Description
Roasted Delicata Squash. Serve as a side dish for any meal.
Ingredients
3 lbs. Delicata Squash
2 tablespoons Extra Virgin Olive Oil
1 teaspoon curry powder
½ teaspoon Kosher Salt
½ teaspoon Black Pepper
Instructions
Preheat oven to 425 degrees
Cut ends of squash off, then cut squash in half lengthwise. Scoop out the seeds, the cut
squash into 1/2 inch crescents.
Place squash crescents into a large bowl drizzle olive oil over squash, sprinkle the curry
powder, salt & pepper and mix to coat evenly.
Place coated squash pieces in a single layer on a half sheet pan.
Roast until golden brown and fork tender, about 20 minutes, flipping halfway through.
When squash is fork tender (if desired) place under broiler till desired color.
