Description
Old Fashioned Baked Rice Pudding is a creamy and sweet custard with cinnamon and
vanilla.
Ingredients
3 cups cooked rice
4 large eggs
¾ cup sugar
3 cups whole milk
1 cup heavy cream
1 ½ teaspoons cinnamon
2 teaspoons vanilla
1 cup raisins (Optional)
Instructions
Preheat the oven to 350 F.
You will need a 9x13 buttered baking dish.
In a large bowl whisk together the eggs, sugar and cinnamon until combined. Add the milk,
cream and continue to whisk until combined. Add the cooked rice and raisins (If using) and
gently stir. Gently pour mixture into the prepared pan and ensure rice is spread (If desired
you can use the Water Bath method to bake). Place the pan into the oven on the center rack
and bake for 50-60 or until just set (will be somewhat giggly when first removed from the
ove) the top is golden brown.
Let cool on a cooling rack for about an hour or allow to cool completely. Serve warm or cold.

Additional Comments
Water Bath method:
Place baking pan into a larger baking pan and add hot water into the larger pan to about
half way up on the smaller pan. This method is supposed to give the pudding a more custard
like texture.,
