Description

This is a vegetarian version of my Grandmothers Sunday gravy. I use this gravy when I want a gravy that will not overpower the other ingredients of the dish or when I want the dish to be vegetarian.

Ingredients

3-28oz cans of peeled crushed tomatoes 6oz can Tomato Paste 2 cups Vegetable Stock 2 large Onions ¼ cup Olive Oil 4 Cloves Garlic 1 rounded teaspoon Dried Oregano 4 Fresh Basil Leaves 1½ teaspoon Kosher Salt ½ rounded teaspoon Pepper 1-2 Tablespoons Sugar (optional)

Instructions

Sauté onions on medium heat until lightly browned. Turn the heat source off or to low, add garlic and let cook for 1-2 minutes. Add peeled crushed tomatoes, chicken stock, tomato paste, dried oregano, salt & pepper, sugar and fresh basil. Simmer on low 2-3 hours.
