Ok, yes this is not a Traditional Shepherds Pie, but it is delicious.
Ingredients
2 lbs. ground beef
1 large green bell pepper, diced
1 large red bell pepper, diced
1 large sweet onion, diced
1 large clove garlic, minced
2-4 tablespoon olive oil (To saute peppers/onion)
8 oz package instant Mashed Potatoes (You will need some additional milk, see recipe)
½ cup sour cream
2-3 cups cheddar cheese (Depending on how much cheese you like)
14.5 oz can of diced tomatoes, drained
1 15.oz sweet corn, drained
½ cup tomato sauce
1 teaspoon of your favorite Seasoning Salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
2 8.5 oz boxes Corn Muffin mix
Instructions
Preheated 350 F oven. 9x12 baking pan.
In a large heavy bottomed skittles on medium heat, add olive oil, allow to come to temp, add
the peppers, onion and saute for 5 minutes, add the minced garlic, mix into peppers/onion.
Add the ground beef and saute until browned, add the diced tomatoes, tomato sauce and
the can of corn, mix to incorporate and set aside.
Prepare the instant mashed potatoes per package instruction. Add the seasoning salt, garlic
powder, onion powder, black pepper and sour cream. Mix to incorporate, while stirring, add
enough additional milk to the mashed potatoes to loosen slightly (You want to be able to
spread them without too much fuss) set aside.
Prepare the corn muffin mix according to package intrusions (but do not bake). Spray the
bottom and sides of a 9x12 inch baking pan and pour prepared corn muffin mix into the
baking pan (don’t let it sit too long, as I did in the video).
Gently spoon the ground beef over the corn muffin batter, sprinkle half of the cheese over
the ground beef. Spread the mash potatoes evenly over the top and sprinkle the rest of the
cheese over the mashed potatoes.
Bake in a preheated 350 F oven for 35-40 minutes or until bubbly and cheese is slightly
browned.
