While this mashed sweet potato recipe is not fancy it is savory and sweet and will have everyone going back for seconds.
Ingredients
3 lbs. Sweet Potatoes, peeled and cubed2 Tablespoons Melted Butter½ cup Half & Half or Milk3 Green Onions (green part only)1 teaspoon Ground Garlic1 teaspoon Kosher Salt½ teaspoon Ground Black Pepper2 Tablespoons Sea Salt (for the cooking water)
Instructions
Place potatoes in a large pot, fill the pot with cold water to cover potatoes by about an inch and add sea salt.Bring to a boil, reduce heat to medium-low and simmer uncovered until fork tender, about 10-15 minutes.Drain sweet potatoes and place back in the pot. Mash potatoes using a potato masher until desired consistency.Add in the melted butter and incorporate into the sweet potatoes. Slowly add in the milk and continue to stir.Add the remaining ingredients and stir until fully combined.
