Description

Tender meatballs, carrots, celery, onions and your favorite greens with a little pasta in a delicious broth that will warm your bones.

Ingredients

For the meatballs: 1 pound ground Meatball Mix or 1 pound ground beef, ground pork, ground veal or ground chicken. 1 large egg, beaten. (You may need a splash of milk to mix) 2 tablespoons minced onion 1 clove garlic, minced ½ cup Romano Cheese ¼ cup dried bread crumbs ¼ cup chopped parsley (Or if using freeze dried parsley, 2 teaspoons) ½ teaspoon salt & pepper (Or to taste) Broth: 4 cups of chicken broth 2-4 tablespoons extra virgin olive oil (Enough to coat the bottom of the pan you are using) ½ cup celery, diced ½ cup onion, diced ½ cup carrots, diced 2 cloves garlic, minced 1 large head Escarole, thoroughly washed and chopped ½ cup of uncooked small tubular pasta Salt & Pepper to taste

Instructions

Over medium heat coat the bottom of a stock pot with olive oil. Add the celery, onion and carrots. If desired add a few pinches of salt and saute, stirring occasionally for 10 minutes. Add garlic stirring until you can smell the garlic, immediately add the chicken broth and bring to a simmer until you have made and rolled the meatballs. Meatballs, in a large bowl combine all the ingredients for the meatball and mix until well incorporated. Roll your meatballs into your preferred size, when meatballs have been rolled carefully add to the chicken broth, bring high simmer (Medium sized bubbles breaking on the surface, loosely cover and cook for 20 minutes. Check meatballs for doneness (No pink in the middle) and adjust seasoning if needed. If desired add the pasta (Or cook pasta separately and add right before serving). If you have added the pasta, let cook for 5 minutes, then add the escarole and continue to simmer for an additional 5-10 minutes. If you have not added the pasta add the escarole to the broth and simmer for 10 minutes. Serve Hot.

Additional Comments

You can substitute the escarole with spinach or just about any leafy green you like.
