Description

Guinness Chocolate cake isn’t your everyday chocolate cake and it’s not just for St. Patrick’s Day. The stout beer, dark coco and sour cream make a delicious super moist and fudgy cake.

Ingredients for Cake

1 cup salted butter 1 cup Guinness 1 cup dark cocoa powder 2 cups All-Purpose Flour 1 cup White Granulated Sugar 1 cup Light Brown Sugar 2 teaspoons Baking Powder 1 teaspoon Coarse Salt 2 Large Eggs 1 cup Sour Cream 1 tablespoon Vanilla Extract

Ingredients for Frosting

½ cup Salted Butter 8 ounces Cream Cheese 1 teaspoon Guinness 1 teaspoon Vanilla Extract 3 cups Sifted Confectioners’ Sugar pinch Coarse Salt (optional)

Instructions for Cake

1. Grease and lightly flower a tall sided 9″ springform or cake pan. 2. In a medium saucepan over low heat, melt butter and add 1 cup beer. Bring to a simmer and remove from the heat. Whisk in cocoa powder and allow to cool. 3. In a medium bowl combine flour, sugars, baking powder and salt. Whisk well to ensure no lumps. 4. In a large bowl combine eggs, vanilla and sour cream. Whisk in cooled chocolate-butter- beer. 5. Carefully stir in the dry ingredients. 6. Pour batter into prepared cake pan. 7. Bake in a 350(F) oven for 50-55 minutes. 8. Allow cake to cool completely.

Instructions for Frosting

1. Cream butter and cream cheese thoroughly and add Guinness and vanilla. 2. Add sifted powdered sugar gradually until fully combined, smooth and creamy. 3. Finish with a pinch of coarse salt if desired.

Additional Instructions

The brown sugar did not mix well with the dry ingredients, There were quite a few lumps. The lumps disappeared when mixed with the wet ingredients.
