Description
This classic Italian American recipe is the only way my grandmother could get me to eat
green beans andi s still one of my favorites today.
Green beans in tomato sauce is one of those side dishes you can’t go wrong with and it pairs
perfectly with any meat or fish dish.
Ingredients
2 pounds Fresh Green Beans trimmed and cut in half
2-3 tablespoon Olive Oil
1 Medium Onion
2 Cloves Garlic
1-28 oz can of Ground Peeled Tomatoes
1 teaspoon Sugar (optional)
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
½ teaspoon Kosher Salt
½ teaspoon Fresh Ground Pepper
2 tablespoon Sea Salt (for the water to cook beans)
Instructions
Bring a large pot of water (About 4 quarts) to boil. Reduce heat source to medium and cover
while you prepare the sauce.
Over medium heat coat the bottom of a large sauté pan with olive oil, add onions till just
translucent about 4-5 minutes. Add garlic and sauté with the with the onions about 30
seconds, or until smell the garlic. Add crush
Tomatoes add the 1 teaspoon of sugar (If using) the oregano, basil and salt & pepper.
Bring to a simmer then reduce heat source lo low and let sauce simmer uncovered.
Bring water back to a boil add the sea salt, then add the 2 pounds of green beans to the
boiling water and cook 5-8 minutes, beans will be bright green and Al dente tender. Brain
and add beans to sauce let the beans gently simmer in the sauce on medium low for about
10-15 minutes. The beans will begin to absorb the sauce and finish cooking and the sauce
will reduce.
