Description
Chicken marinated in a mediterranean inspired spice blend, served over orzo and topped
with a cucumber & tomato salad with a light lemon, olive oil and dill dressing.
Ingredients
1½ - 2 pounds chicken tenders
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground coriander
1 tablespoon smoked paprika
½ teaspoon ground cinnamon
½ teaspoon crushed red pepper flakes (optional)
Kosher salt to taste (I use 1 teaspoon)
Black pepper to taste (I use 1 teaspoon)
6-8 tablespoons extra virgin olive oil (use to fry the chicken)
6 cloves of fresh garlic, minced
4 cups chicken broth
2 cups orzo
1 English cucumber (aka a seedless cucumber) sliced into bite size pisces
2 cups cherry tomatoes, halved
½ cup feta cheese, crumbled
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice

Additional Comments
You can use boneless chicken breast or boneless chicken thighs cut into strips (tenders).
