Description

This is the Cornbread Stuffing I have used to stuff my Thanksgiving Turkey for many years. Keep in mind this is not a Southern Style Cornbread Dressing. In the video I have prepared it as a stand alone Dressing but I have included directions if used to stuff your turkey and how to bake as a dressing alone side of the turkey.

Ingredients

12 oz dried and crumbled Cornbread (I use a commercial brand Cornbread Classic Stuffing). 1 stick of melted butter (½ cup) 2 cups Turkey/Chicken/Vegetable broth (your preference keep in mind the container could also be label Stock) 1 cup diced or sliced thin celery 1 cup diced onion 1 large Granny Smith Apple peeled, corded and diced ½ teaspoon dried Sage ½ teaspoon dried Thyme ½ teaspoon Kosher salt ½ teaspoon black pepper To saute the vegetables: 2 tablespoons extra virgin olive oil 2 tablespoons butter You will need a 2 quart baking dish, buttered.

Instructions

Directions to be cooked alone as Dressing. See Additional Comments to be prepared for stuffing and how to bake as dressing with your turkey. Preheat the oven to 350 F In a large frying pan over medium heat add 2 tablespoons butter and 2 tablespoons olive oil (you may need or want to use a little more butter/olive oil while sauteing). Add the diced celery and saute for 3-4 minutes, then add diced onion and continue to saute for an additional 10 minutes. Salt & pepper to taste as you saute the vegetables.Add diced apples and continue sauteing 3-4 minutes cover, remove from heat and set aside. In a large bowl add the dried corn bread, evenly sprinkle the sage, thyme and salt & pepper over the top and toss to coat. Add the celery, onions and apple and again to coat. Add the melted butter and again toss to coat. Add the broth and mix until the broth is well combined into the cornbread. Place the dressing into a 2 quart butter baking dish evenly, cover and bake until heated through (The sides will be slightly browned and you will see bubbles on the side and around the edge (about 45-50 minutes) . If you want to be more browned and have a slight crunch, uncover at about 35 minutes and continue to bake until desired color.

Additional Comments

If making it to be cooked alongside the turkey as Dressing follow the above and bake at the same oven temp and time as your turkey. If you are preparing for Dressing you can certainly make a day or 2 before and refrigerate. Stuffing: I would not prepare and refrigerate before using for Stuffing, but if you do make sure to bring the stuffing to room temperature before you use it to stuff the turkey. Follow the recipe as above, loseley stuff the front and back cavity, then follow the package directions for roasting a stuffed turkey.
