Corn Chowder
Ingredients
¼ cup Unsalted Butter
3 tablespoons All-Purpose Flour
1 Medium Onion
3 cups Chicken Broth
2 pounds White or Gold Potatoes
4 cups Frozen or Canned Sweet Corn
2 teaspoons Kosher Salt
½ teaspoon Accent Flavor Enhancer (Optional)
½ teaspoon Pepper
1½ cups Heavy Cream
1½ cups Whole Milk
Optional:
Bacon, Fried Onions, Croutons,
Oster Crackers for garnish
Instructions
Melt the butter in a large saucepan over medium high heat. Add in the onions and sauté for
about 5 to 7 minutes. Stir in the flour until a paste forms and cook for 1 to 2 minutes. Whisk
in the chicken stock until smooth and bring to a boil. Add in the potatoes, corn, Accent, salt
and pepper. Reduce heat source, cover and simmer until the potatoes are tender, about 15-
20 minutes. When the potatoes are tender, add in the milk and cream and stir to combine.
Bring back to a boil then reduce heat source and simmer uncovered for another 5-10
minutes. Taste and season with additional salt and white pepper as desired. Garnish with
crumbled bacon/crispy onions/croutons if desired.
