Description
My version of this classic Italian American favorite. Chicken cutlets coted in my homemade
breadcrumbs, fried to a golden brown then topped with cheese and my homemade gravy.
Ingredients
6 Chicken breasts, evenly flattened to about ½ inch
1 cup AP flour
2 cups breadcrumbs homemade or Italian flavored prepared
3 large eggs well beaten
½ cup shredded parmesan
½ cup shredded Mozzarella or Sharp Provolone
2-3 cups homemade veg red sauce or your favorite prepared
4 or 5 fresh Basial leaves chopped
⅓ cup olive oil
Instructions
Pre-heat oven to 450 degrees
Place chicken breast between sheet of plastic wrap and pound with a meat hammer to a
consisted 1/2 thickness.
Evenly coat chicken on both sides in the flour, dredge both sides in the egg then evenly coat
both sides of chicken with the breadcrumbs lightly pack both side with you hand.
In a cast iron skillet of heavy pan heat about 3-4 tablespoon olive oil on medium heat. When
oil is heated place prepared chicken breast in skillet and brown about 2-3 minutes per side.
When chicken is browned placed cutlets in prepared baking dish. Cover chicken with
Mozzarella or Provolone then cover with gravy. Bake uncovered for 15 minutes. Remove
from oven set to broil, sprinkle parmesan over cutlets and broil until cheese is bubbling and
browned.
