Description

Chess Pie is a classic Southern Pie. It’s sweet, buttery and tangy all at the same time and is now one of my favorites.

Ingredients

1 Deep Dish Pie Crust (frozen/Made from scratch) If frozen, follow the package direction. 1 stick (8 tablespoons) unsalted butter, softened (room temp) 1½ cups sugar 4 large eggs (room temp) 2 tablespoon all purpose flour 1 tablespoon of yellow cornmeal ¼ teaspoon salt 1 tablespoon white vinegar 1 teaspoon vanilla extract ¼ cup evaporated milk (you can use whole milk as well)

Instructions

Preheat the oven to 350 degree F In a large bowl mix the butter and sugar until well combined, add eggs and continue to mix until well blended, then add the all-purpose flour, yellow cornmeal, salt, vinegar, vanilla and milk and continue to mix until well combined. Pour mixture into pie shell and bake in a preheated 350 degree F oven for 50-60 minutes (The top of the pie should golden brown) till middle is set, or until a knife inserted in the center comes out clean. Allow the pie to cool completely and serve.

Serves

6 - 8

Additional Comments

If you find the edges of the crust are browning too fast, cover the edges with foil.
