Description
Boxty is a traditional Irish potato pancake usually served with breakfast.
Ingredients
1 cup mashed potatoes
1 cup peeled and grated raw potatoes
1½ cups AP flour
1 cup buttermilk (Or whole milk)
1 teaspoon baking soda
1 teaspoon Kosher salt
½ teaspoon black pepper
2 tablespoons oil
1 tablespoon butter
Instructions
In a small bowl, place the flour, baking powder and salt and pepper set aside. Using a large
mixing bowl, combine the mashed potatoes with the grated raw potato, then add the flour
and mix well. Slowly add the buttermilk and stir gently (do not over mix). The mixture
should be like a thick batter and should come together, add additional buttermilk if needed.
On medium heat using a nonstick frying pan add enough oil to coat the bottom of the pan,
When oil is heated add the 1 tablespoon of butter and allow to melt. Add the desired
amount of batter (How big or small of a pancake you want) to the frying pan and flatten out
into a pancake shape. Fry until golden brown (About 5 minutes) turn over and fry the other
side until golden brown.

2 - 4
Additional Comments
If you do not have buttermilk you can make your own, 1 teaspoon white vinegar to 1 cup
milk and let it stand for 5 minutes. You can also use plain milk. This recipe is for traditional
Boxty, make it your own by adding scallions, greeted cheese and/or fresh herbs.
