Bolognese Sauce
Ingredients
2 Carrots, diced
2 Stalks of Celery, diced
1 Large Onion, diced
4-5 Tablespoons Olive Oil
1 Pound Ground Beef
½ Pound Ground Pork
2 Italian Sausage Links - (casing removed)
Red Wine
2 cups Crushed Tomatoes - (can also use puree)
1 Cup Whole Milk
1 teaspoon Kosher Salt
½ teaspoon Black Pepper
½ teaspoon Nutmeg
Parmigiano Cheese to garnish
Instructions
Heat oil in a heavy bottomed pan, add carrots, celery and onion and cook on medium-low
heat until onions are translucent (about 5 minutes). Add beef, pork and sausage and cook
until browned (About 10 minutes). Add enough red wine to just cover meat and veg,
continue to cook on low and allow the alcohol to evaporate (about 5-10 minutes). Add the
can of tomato, stir to blend, cover and simmer for 3 hours stirring occasionally. Add salt,
pepper and milk, continue to simmer uncovered until liquid is reduced and you have a thick
sauce.
