Description
New England Apple Cider Cake is sweet and delicious with a touch of cinnamon topped with
a creamy apple cider glaze.
Ingredients
For the cake:
1 cup apple cider, reduced to ¼ cup
3 large Granny Smith Apples peeled, corded and sliced
4 tablespoons unsalted butter at room temp
1 cup granulated sugar
2 large eggs, at room temp
2 cups all-purpose flour
1½ teaspoons Baking Powder
½ teaspoon Baking Soda
¼ teaspoon table salt
½ cup Heavy Cream
To sprinkle over to off cake before putting in the oven
1 teaspoon cinnamon + 3 tablespoon granulated sugar
For the Glaze:
1 cup apple cider, reduced to 2 tablespoons
1 cup confectioners sugar
2-3 tablespoons heaven cream
Instructions
Place 1 cup of apple cider in a sauce pan and bring it to a boil, lower heat source to a high
simmer and reduce to ¼ cup. This will take a good ten minutes and while you don't have to
stir it constantly keep a close eye on it. Once reduced to ¼ cup remove from heat and set
aside.
Preheat oven to 350 F.
Use a 9X9 square pan well greased with vegetable shortening.
Add the room temp butter and the sugar to your mixer and mix, scraping down the sides
asneeded.until smooth.
In a separate medium bowl, sift the flour, baking powder, baking soda and salt. Add the
heavy cream to the cooled cider and mix to combine. Altinate combining the dry ingredients,
the sugar and egg and the combined apple cider cream mixture in the mixer, scraping the
sides as needed to smooth.
Pour batter into the prepared baking dish and spread evenly. Arrange the apples (Outer
edge up) into the top of the batter. Add 3 tablespoons granulated sugar and 1 tablespoon of
ground cinnamon to a small bowl and mix to combine. Sprinkle evenly over the top of the
cake and apples.
Place on the middle rack into the preheated oven and bake for 50-60 minutes or until a
toothpick inserted in the middle comes out clean.
When the cake is done put on a wire rack and allow to cool to room temp.
While the cake is cooling add the other cup of apple cider and reduce to 2 tablespoons (Give
or take). Add the powdered sugar to a small bowl, then add the cooled reduced cider and 1
tablespoon of the heavy cream and stir to combine. Add additional cream till the glaze is the
desired consistency. The glaze should be thick but thin enough to drizzle off the spoon.
Cut the room temp cake (Leave in pan) into 9 squares. Remove the squares to a platter and
drizzle the glaze over the tops letting the glaze run down the sides.
